Australian Fruitcake


This has been a post ride/run/paddle staple for as long as I can remember. My Australian Grandmother’s recipe, it is not at all your usual dense fruitcake, more like food.


3 cups self-rising flour*

1 cup sugar

1/3 cup each raisins, currants, sultanas

1/2 cup chopped dried apricots

1 tsp each cinnamon, ginger, nutmeg (or mixed spice to your taste)

2 eggs

1 and 1/2 cup milk

4 oz butter, melted and cooled

* self-rising flour = 1 cup flour, 1 tsp baking powder, 1/4 tsp salt


1. Grease and flour a loaf or bundt pan.

2. Pre-heat oven to 375F.

3. Whisk or sift together all dry ingredients. Add dried fruit. Whisk together melted butter, eggs and milk and fold into dry ingredients and spoon into loaf pan. Do not over-mix. Bake 45-50 minutes.
